This past week has been hard fibro wise. Not that fibromyalgia is NOT a difficult issue to deal with day to day, but when the flare ups start, mannnn I am out of commission. It is like have the flu, being hit by a car, and then being dropped off a building. Yeah, sounds dramatic, but it’s no joke, anyone with a chronic illness can tell you that. I did get enough energy to have brunch with one of my besties. I call her Feta because she’s from Greece and she calls me Goat because I’m Polish….it’s an inside joke…. Here we are being silly as usual…
After that I decided I needed to keep up my strength. I wanted to make something comforting yet nutritious and since I am avoiding gluten it kinda narrows things down. So I was going through some of my go to Paleo websites and found this delicious zucchini noodle recipe. My version, however, was not Paleo as I added organic half and half. You can substitute the half and half for almond milk. To thicken it up you can add in some coconut or almond flour if your a devote Paleo follower. This meal is low carb, high fat so if you are avoiding carbs or trying to hit those protein macro goals this is for you too!!!
Creamy Sundried Tomato Parmesan Chicken Zoodles:
- 1 Tablespoon Butter
- 1 1/2 lbs skinless chicken breast fillets, cut into strips
- 4oz jarred Sundried Tomatoes in oil, chopped
- 4oz Pancetta
- 4 cloves of Garlic, peeled and crushed
- 1 Shallot, cut int strips
- 1/2 cup Sherry
- 1 1/4 cup of cream ( or almond milk/almond flour mixture)
- 1 cup of Parmesan cheese (or cream cheese substitute)
- Salt to taste
- Dried Basil seasoning
- 2 Large Zucchini, made into Zoodles
Heat the butter in a pan/skillet over medium high heat. When butter melts add garlic, shallots, pancetta, and sundried tomatoes. Simmer until garlic and shallots are golden and add chicken. Cook on each side for 3-4 minutes or until chicken is golden brown.
Add the cream and cheese and bring to a boil. Stir the mixture until it becomes thick- not too thick-think Alfredo sauce! Then reduce the mixture to medium low heat. Add the Zoodles and simmer for another 5 minutes. Sprinkle with basil…. annnddd Voila!!!!
So there you have it a healthy and delish comfort dish. I had zero guilt stuffing this into my face especially knowing it had an array of vitamins and nutrients my body needed.

Meghan is doing great things to keep her sister’s memory alive. If you’re not familiar, Diem lost her battle with Ovarian Cancer last November, but not before touching the world with her beautiful light. She was on several seasons of Real World Road Rules Challenge and was in alot of media outlets sharing and inspiring others on her journey with cancer. In honor of her sister MTV put together a video of Meghan advocating and educating other on Ovarian Cancer. It’s a great video and a great article. Please please please this out guys!
